African Peanut Sauced Chicken

This is a simple chicken recipe that is VERY yummy. It's got onion, peppers, tomatoes, and....peanut butter! Really sounds weird, but is SO good. This was a recipe my girls had in their Reading packet from BJU yesterday. We decided we'd try it, since it was labeled African. I'm glad we did. It was really yummy. Hope you try it and like it too!

African Peanut Sauced Chicken

2 1/2 lbs. chicken, chopped
1 medium green pepper, chopped
1 onion, chopped
1 can tomatoes
1 small can tomato paste
1C water
1 chicken bouillon cube
3/4C peanut butter
salt and pepper to taste
Rice
1. Saute the chicken in a small amount of oil until browned. Add the onion and green pepper and cook until soft.
2. Stir in tomatoes, water, bouillon, and paste. Mix well and bring to a boil over medium heat.
3. Add the peanut butter, stirring often to make sure it doesn't scorch. Simmer thirty minutes, adding more water if necessary. Serve over rice.

I'm thinking you could add peanut pieces for some crunch if you wanted. And I thought even some diced pineapple might be good in the mix. Who knows?

Yummy! We have leftovers for lunch and I'm tempted to eat them for breakfast!
