Big Fat Greek Food (Vol. I)

Today's episode will be featuring Spanikopita. Pronounced: spinach pie.
You need to start with a largish pan. Something like this:



And it needs to have like 3 TBS of E-V-O-O in it. (Extra virgin olive oil) Pardon the Rachel Rae-ism. I don't really say that in real life. But this isn't real life. It's my cooking show. On my blog.

Then you need the other ingredients which would consist of:


Feta cheese (crumbled or not), 6 eggs, and Phyllo dough.

Oh yeah, and spinach.

About four packages of frozen, chopped; thawed and drained.

And you should already have this cooking on the stove.

It's olive oil, approximately four green onions chopped, and fresh dill.

Cook it until it looks done. (When you can smell it all through the house.)

The next steps, which I did not capture on film, because the MIL would not:
A. Stand still
B. Slow down
C. Step out from in front of the camera

So, you need to trust me when I tell you the next step is to combine the drained spinach, feta, and eggs with the onion/dill mixture.

Then you look at it and decide you need to add a half cup of Parmesan cheese.

Then you put a quarter cup of olive oil on the top and mix it in.

Next you need to line half of your pan (width-wise) with two sheets of phyllo. Then do the other half. Then you can begin to add your spinach filling, so that it look something like this:



When you're finished it will look like this:



Now fold over your edges.



Then add four sheets of phyllo on the top, two at a time.



When you're done with that, sprinkle the top with a few tablespoons of milk.



And then a half cup, yes, A HALF CUP of olive oil.



Bake it for 30 minutes at 425 degrees, then reduce the heat to 350 for one hour.

When finished, it will be this spinachy, golden brown goodness. Yum!!
